0 dl everything and put the 208 update on your sdcard
1 fastboot 219 with mattlgroff tool
2 use unstickics from mattlgroff and fastboot the old kern with 208
3 install 208 via sdcard and recovery
4 root with tool
5 in market install superuser

What is so different about ics vs gingerbread other than the interface? I've been reading about some of the pros and cons and any extra information would be helpful.

The same thing that is different between windows 7 vs xp/vista and mac os mountain lion vs lion/leopard and any OS update. It is newer, faster, better, smoother, newer features, better battery life, takes advantage of the latest hardware better (ie multicore cpu support ect). Apps that take advantage of the new features wont run on the older OS. Just install it. You will enjoy it :).
