What are the benefits to rooting?

Basically what benefits will I get out of rooting my phone? If it helps, I'm slightly technical but not a big techno bug if that helps.

Also by rooting it would that void my insurance with Verizon?
If I root the phone can I unroot it and set it back to normal?

I rooted so I could remove the random applications (like CityID and such) from the D2, and so I could conserve battery by modifying how my CPU acts. I also wanted to have a themed phone as well.
