It Boot loops with most of my back ups.
There's only 2 out of 6 that will restore.
If I try to restore the others, they Bootloop
and then I have to SBF and try another one.

Are those backups made while you had 2.3.2, and did you move to 2.3.3 (or vice versa)? If this is the case, that would make more sense. You wont be able to swicth back and forth between, say, Zombiestomped and Fission because they're 2.3.3 and 2.3.2 ROMs respectively.

**The reason for this being that when you make a backup, the kernel is taken into account. 2.3.2 and 2.3.3 have different kernels, and that's why they wont load, and will either bootloop or hang on the bootscreen when trying to switch between the two.

After you restore and when it's bootlooping get into CW go to advanced and wipe davlik cache. That seems to fix bootloops for me anyway.

I SBF to 2.3.2., z4Root, then trying to restore
the GB leak backup, or Liberty 2.0. about half of the backups work.
The other half Bootloop.
Also I can't seem to get any other ROMs to install.
I've tried Fission and Apex. Bootloop on both.

Install the leak after rooting and then try restoring the backups.

GB flashes OK from 2.3.2. its the backup thats a problem.
Is it better to CWM from recovery or Rom Manager?
Same thing right?
Also I can't get to recovery pushing x, then search.
Just takes me to android recovery.
Volume up/down doesnt do it either.

I'm struggling with apex for now,
but I've found liberty to be the most stable rom.
Its the only backup that restores reliably.
I prefer the white GB theme for easy readability.
Any other white themes you like? Beside oreo?
