Rooting, bloatware, and updates...

I've heard the merits of rooting the phone, but since I'm a newb to this kind of significant technical programing I'm a little nervous. The reason I want to root is really just to get rid of all the boatware that the phone came with. So, essentially, I want to root, delete all that crap, and then unroot. Is that possible? And if I do and another update comes along is it going to reinstall all that crap on it?

Also, if I just stay rooted what happens with the updates? Do I have to do them manually or can I let the OTA happen as usual?
