Petes ROMs block OTA updates, you will be fine.

Somebody I could use some help, I am on a Froyo ROM and would like to go back to 2.1 stock without root/su, I don't know how. I tried Wipe Data/Factory Reset on Clockwork Mod Recovery and when I rebooted I still had my Froyo ROM. I looked onli the for a stock ESE81 but couldn't find anything. Help? P.S.- I'm on the "Insanely Clean New Revolution v1.1" ROM, and P.S., its great.

You have to download the 2.1 stock update.zip and flash it in clockwork.
