I thought it just fixed some slight bugs? At least that's what I had heard. I heard it fixed the camera auto-focus problem and maybe a few other things... is it drastically different in any way?

You're thinking of the ota update from veriOn, I'm not sure that's the same as the 2.1 update for the operating system.

Most people seem to believe that is the Sense UI that has been updated in conjunction with the 2.1 system.

Well sense ui is just a UI that runs on top of the android platform. I would imagine that is 2.1 is released that the rest of the droid community wouldn't be far behind.
