Does anyone know how to do this or can point me in a guide so I can create my own nifty home screen. Also wondering if we have 3 home screens and move on to other ones, will it mess up?

In addition if anyone knows how to make those lock screens too. >>> point me there.

First off get launcher pro from the market(free but the paid version is well worth it). You can have up to 7 home screens and up to 3 docks. Next you have to look for sets of text icons that you like. there are many our there and most can be found right here on these forums. with launcher pro you can set custom dockbar icons. As for the home screen text icons you can use desktop visualizer, found in the market for free. All very easy just takes a bit of time to figure it all out.
