Clock work Mod backup ?

If I backed up a good, working Liberty ROM and theme with cwm, THEN install Rubix ROM (love it) and back it up, can I restore to the Liberty set up, and then back to Rubix?

Yes. I would recommend doing a data/cache wipe before restoring a backup.
