New to ROMS

I've had my Dinc for about 3 weeks and finally got it rooted a couple days ago. I'd like to really just get rid of the bloatware, but looking at the posts in this forum I like the look of gingerbread.
My question is, what do I need to know about installing a new ROM? Is it basically a new theme for the entire phone? Are there any downsides?
Also, what do I need to do to be able to remove the apps I won't use from my phone? Is that more of a hack?

Sorry for all the newbie questions, just trying to learn my way through this all. I'm not quite sure my questions came out right, but hopefully someone will be able to help me

Rooting/ Flashing ROMs/ Unrooting stickies

This should give you a general idea. Since you have already rooted, download titanium backup and delete your programs through there.
