Hey guys! I'm just asking for curiosity's sake: how much functionality would one lose if one opted NOT to use a google/gmail account on an android device?

You have to sign in with a google account anyway...not sure what your question is?

I don't think so. During the activation process, you can opt to not sign in with a google account.

Well if you opted not to, then you can't download apps and such...you wouldn't lose anything by signing in.
