+1 on LP & LPP .... super stable, quick & highly cutomizable with LPI. The only other option (to me) would be ADW, as RR mentioned. Now, RR has a good deal more Android experience than myself, but I have a decent computer geek background + I am a quick learner (read XDA forums like you have no idea what going out & socializing is and you will -LEARN- faaasssst
) ... Go with LauncherPro ... then LP+ .... once you toyed with it, you'll love it ... especially compared to all the others !
As for the newest CFS kernel, I am (and have been) running NonSensikal Froyo 15.2. Both run CFSv8. I HIGH-ly recommend either KaosFroyo or NSFroyo. Both are Froyo 2.2.1 - NS is a straight CyanogenMod build and KF is an AOSP/CM build.
Actually 2 others ROM choices would be TazzFroyo & CELB Froyo (dev by Conap who builds those kernels!) - I cannot speak for either, personally -BUT- they are both VERY reputable dev's and no wtf they're doing !
Back to the CFSv9, from reading the XDA forums, there are some pro's and some con's. I am thinking it is a little hard on my battery life, but otherwise it's another great piece of work from Conap (& Deca) ... I am going to flash back to v8 to see if my battery life improves, but my battery life has basically alwaaaays sucked regardless of ROM/Kernel. It really depends on the ROM you are running. Please lmk what your experience is !
THANKS TO XDA (and definitely DF, too !) ... Got my Eris in June (only b/c the INC. was backordered for over a month) .... I went from despising my brand-new stock 2.1 Android Sense Eris (thinking "This is a "smart"-phone ?!?!?) to absolutely LOVING it -> all it took was Eris 1-click root, flashing Kaos Froyo and have never looked back !
Thanks to Punk.Kaos and his blazing port of Gingerbread to our beloved, but totally left for dead <by VZW> Eris, that Im not upgrading anytime soon !
