I have always been a proponent of "Rom all the things"! The great thing about flashing roms to your device or atleast having the ability to do so is that you can keep your devices running the latest and greatest versions of Android long after they have been end of lifed by the OEM. Also why wouldn't you be able to have full control of the software your hardware is able to run?

Even Smartwatches are able to run custom roms. The Asus ZenWatch 3 now has an unofficial build of TWRP. This means that you can flash roms and other mods to the smartwatch. You are also able to fully backup your smartwatch with TWRP. The recovery is untested as far as rom flashes and zip flashes are concerned so you may want to monitor the thread for a bit and see how those functions worked for the brave early testers before attempting this on your watch.
