What are the benefits of using wiring? I have pretty good 3g coverage, never go over my usage and really can't tell a speed difference between the two.

Speed tests definately prove the wifi is faster I just hadn't really noticed a difference browsing the web, hitting the market, etc but I will use wifi for a while and see if I notice a difference.
Does it matter that I am not rooted or should stock phones see a difference? Will rooting and overclocking accentuate the difference between the two services?

No rooting and overclocking shouldn't make a difference in the transfer speeds but could make a difference in how fast the incoming data is processed (screen updates, etc..).
WiFi is typically faster than 3G (depending on your internet speeds at home) and when downloading large files you can really see the difference (like a new ROM image or such).
There is no data limit on the 3G so you can't go over any thing.....so if you 3G coverage is great and just as fast as your home internet...then there isn't any reason to use WiFi.
When I'm at work I get horrible cell reception so I turn on WiFi to keep the phone constantly searching for the 3G network......this saves my battery life tremendously as well as giving me 10mbit download speeds vs. my standard 1mbit.
While I agree that there is a big difference in speed, "Free" WiFi can spotty. Most places I've been to with free Wifi won't let me access the Market, Amazon, Savvy Shopper, Speed Test or even Bettr Flickr.
