Rename folders on home screen?

once you open the folder, do a long press on the folder name at the top of the folder window... A dialog will pop up letting you rename the folder.

You can also download Application Manager or Folder Organizer from the Market. Both will allow you to create folders with custom names and icons and assign apps to them.
