If I wanted to give my droid X to my girlfriend and the Verizon wireless representative sees that I have gingerbread on it. Will they say something?

I don't think so... Just say you got the OTA if they do. They don't know. They probably won't even say anything or notice.

They can't prevent you from activating it, I think they can only say something about it if you try to get a replacement.
