I was wondering what happens if I were to select install update zip from SD card on the boot options screen when the 2.2 leak is on my SD card.

What are you getting at? Are you running froyo? What are you trying to do?

If you don't have clockworkmod recovery it won't install. There are walkthroughs posted in the Fascinate development section that will instruct you on how to install such things on your fascinate.
