I have an HTC Droid Incredible running Android 2.2 sent OTA. All I wish to do is delete the bloatware off of my phone, nothing else, what would I do? Root, delete, then un-root?

Yep on the "Root, delete". Except I strongly recommend you not delete but rather simply rename (i.e. mp3.apk to mp3.apk.bak). That way you can return to stock very easily and undo anything if you make a mistake.
