When taking pics the camera often takes pics without me even toucing anything. Ill launch the camera and sometimes before I take a pic it'll automatically snap a pic or 2 sometimes it happens after I take a pic. Its set to single shot.

There is a feature that allows you to say things as CHEESE, TAKE PIC, etc. So even though you arent hitting a button it is probably interpreting what you are saying as a take pic command. Disable that option and it should fix your problem.
