Is it possible to shut off the alert tones for incoming mail only? Also, is there a way to assign certain ring tones to certain people for text messages? New Droid owner and still feeling my way around. Thanks!

yes. just open your email and click on the menu button at the bottom, the 4 lines next to the home button, and then go to settings and change it there.

Just go into your email settings and turn off sound notification by selecting a silent ringtone. Is this what you mean?

I have no sounds for email, vibration only. Go into your email program and settings and select your ringtone to be "Silent".

I don't use the stock messaging app, I use Handcent an that allows for setting a specific ringtone for anyone. You can also set the LED to flash a different color for different contacts when receiving a txt message.
