-Dialer One
-SportTap
-Voice
-xScope
-Handcent

My left home screen has
-Calendar
-Music
-Quick Settings
-Contacts

My right home screen has
-Golf Channel App (never use)
-Maps
-MotoTorch
-Games folder
-Sky Droid
-Bible
-Touiteur
-Daily Bible

No real particular set up. Things are where I put them and I have got used to them

Get App organizer...trust me. I have only widgets on my homepages, and the folders that app organizer makes. Makes everything nice and neat, with 0 clutter. FootballRef, you could fit every app icon on your main homepage into one folder.

App organizer is cool... but SLLOOWW

I have sms/phone/browser/email - market/gallery/camera/sports tap on the main
Media apps on the left, music/pandora/iheartradio/youtube/recordroid/listen
right has weather & news widget, power widget and calendar widget

Main screen has only Beautiful Widgets and the 4 buttons at the bottom for Launcher2.
Left screen has SportsTap, Calender and power settings along with a few app icons.
Right screen has my most used apps.
Left2 and Right2 are empty by design.. I like having the extra space "just in case".

on the left:
blue tooth widget
my lock widget
cachmate widget
juice defender widget
battery saver widget
setcpu widget
task manager widget
apps organizer folder that has all my root apps in it

middle:
beautiful home
moto torch widget

volume control widget

right:
panadora widget
mixzing widget
apps organizer folder for navigation
apps organizer folder for other music stuff (mp3 download, ringdroid, etc.)
apps organizer folder for misc (gdocs, gnote, pdf viewer, etc)

and on the bottom by the apps drawer in the launcher hotkeys
dialer
