Okay because I just flashed the leaked gingerbread onto my Droid 2 and it doesn't seem as stable as it should be. When it eventually gets officially pushed to my phone, can I safely update to legit gingerbread from the leaked gingerbread? Or would I have to sbf and stuff?

You would have to SBF back to froyo to receive the ota

You might want to try installing the leaked version again. I've been running GB for about a week now, and the only issue I've had is this weird glitch with my social app closing while I'm flipping through the posts. It's otherwise been pretty awesome, most notable is the improved power handling.

I was running the leaked GB for a while, and I had the random closing on the social networking and weather. But the keyboard/button backlights going out randomly really annoyed me. So right now I SBF'd back to stock and just rooted.
