Is it possible to copy all current apps installed on rubix to another rom?

Your apps will restore themselves after installation of new ROM. You could backup the data,like for games with Titanium Backup but there have been issues restoring app and data with new ROMs. So im not recommending this.

fyi on liberty you can create a folder on your sdcard sdcard/liberty/restore_apps and copy all of /data/apps to that folder. When you flash the rom all your apps restore very quickly.
