To transfer info and data from one card to the other, you can just copy and paste right?

Normal files like documents, pictures and movies yes; not so sure about programs installed on the card though.

The APK files can be copied off and they are designed to be a container file with all the necessary files/folders to install. Programs like AppMonster (my favorite) will backup all the APK files and allow you to uninstall/reinstall right from the SD card.
