My droid always sent the whole text message, I would just always get an annoying message back from Verizon about the amount of characters. I downloaded an app called smsguard which let me block those bounceback messages from Verizon.
As was already mentioned, Handcent works too, but this is an alternative as I preferred the stock messaging app.

Just a quick question: did you ever follow up with your contacts about whether they actually got the whole thing? Whenever I get the "We only send the first 160 characters" message, it always turns out that the person on the other end really does only get that many.

Yeah, I tested it out with my girlfriend and she was getting the whole message. Maybe Verizon finally disabled those stupid bounce back messages on their own though. I just assumed the smsguard program was still blocking them.
