email sync/deleting question

I just got my Droid the other day and our IT department set up my email for me but it doesn't have my work address book for me to use (not my contacts list, the list of everyone I work with). How can I get that? Also is there a way to delete messages off the droid but not in my work email at the office? I need to stay in touch with office emails however I don't necessarily need them all to stay on my droid. Is there a function somehere that will only delete on the droid and not in my email at work?
(I am a long time blackberry user where this was an option)
