what is rooting?

Hello. Please pardon my ignorance, but could someone please explain what a rooted phone is vs a non rooted phone? I just ordered a motorola droid and am anxiously awaiting it's arival. I have been using a dare so a smart phone will be new to me. Reading through these forums makes me almost wonder if i'm getting in over my head but really want to know how to utilize the phone to it's max capabilities. I am buying my phone on ebay (it's used for a month in excellent condition) so i'm thinking I wont have any warrenty on it yet I don't want to do anything to ruin the phone. Rooted and non rooted seem to be mentioned a great deal around here.
