What can / should I freeze?

I have my rooter with Eclipse, all is working great. Now I wondering, using root uninstaller - what I can I uninstall that came with the phone without casing issues. I am also getting a "system update from verison" is available message that I would like to go away - I am assuming, that if I go and do that update, it either will not do anything, screw up the phone - or who know what?

Any suggestions would be helpfull.
