Sounds like sense has been replaced with android home easy fix just clear the defaults in home app and the press the home button and it should give you the option to either open it with sense or android home, just choose sense and you should have 7 screens again.
To do this go to settings, applications, and manage applications and look for the home app, click it and the choose clear defaults.
