I recently reflashed my droid to 2.0.1 but can't get it to update back to 2.1 i've tried checking on the phone for software updates but it says the most recent software is already installed. Any help would be great guys

I have no idea what you're talking about but here's a :bump: for you! Personally, if you're rooted now, I'd just install a 2.2 rom and run with it

Google probably removed the 2.1 update from their servers when they started pushing out 2.2. You can either install 2.1 or 2.2 manually (you can find links here for either if you search) or wait for Google to download 2.2 to you. Note that some are having problems with the 2.2 manual update, but it seems to be working fine for me and many others.
Here's the file....

1. Place it on your SD renamed as update.zip, turn off phone
2. Hold X and turn on the phone
3. Let go of power once it lights up, let go of X once you see an exclamation mark in a triangle on the screen.
4. Hit the UP volume button and the CAMERA button (Keep trying until stock recovery loads).
5. Run the update.zip and it is on official 2.1 firmware.
