I absolutely agree. I always wait at least a month before updating to the latest OS version. There are ALWAYS issues that pop up regardless of what device your on and I hate being the guinea pig.
That, and I honestly don't see anything that is a "must have" with Lollipop.

Depends on your comfort level and what you define as easy. It is just a matter of unlocking the bootloader and flashing the previous factory image. You can use something like Wug's Toolkit to make it easy. Or have Android SDK set up.
It really isn't as hard as it sounds. Now messing with Android SDK and adb/fastboot commands can get a little tricky because you need to be exact. But as I said using something like Wug's Toolkit makes it as easy as clicking some buttons. Not much to go wrong at all.
Don't forget guys, with a significant update like this, it's always advised to do a factory reset afterwards. Save yourself some headaches later down the road. (Regardless of make/model)
