Touchwiz on the Galaxy S4 does include some awesome features. Some of these features are very useful while others are pretty gimicky. After the novelty wears off you will notice that most of the features will be forgotten and very rarely used. If you aren't using them there is no reason for the apps to bog down your device and take up extra space. It is easy enough to disable bloat apps, but removing them altogether can be a real challenge. Some of the bloat apps are system apps when removed you won't be able to install over the air updates. The best method for removing all bloat has been to backup your stock rom and just install an AOSP style rom, restoring your stock rom when ready to receive an OTA update.

Developer "shcoolsux" has developed a script which will make removing bloat clean and easy. It will allow you to move any of over 98 bloatware apps, and will free up over 600mb of internal memory. More info can be found at the source link below.

It seems like this would be easy enough to port to the S3. It's definitely worth asking the developer.
