What does flashing to recovery do?

You reboot into recovery to flash a ROM, kernel, theme, etc. If the lettering is blue, its SPRECOVERY (my favorite); green lettering is Clockworkmod.

Booting in to recovery will let you make a backup of your current OS/Rom and Kernel. Then you can make changes like loading a different Rom or kernel, and if they don't help or you don't like them you can recover to your last Backup. It is always a good idea to make a backup of the stock OS before adding a Rom.
