So, I'm a Droid virgin! Looking to get my first phone and have a ton of questions.
Stuck between the X, the Fascinate and the Incredible 2, and also leaning heavily towards the Charge, thoughts and opinions welcome there!
Doing a lot of research and I do like to "tinker" so rooting may well be in my future as well.
Is there a way to get rid of VZW's added features or bloatware without rooting?

you could grab launcherPro and get rid of the icons in the app drawer.

between the phones you have listened, i'd go with the Incredible 2 since it's my current phone but better

Other than hiding them like dezymond says, the only way to get rid of those apps is with root access.
