When a new update comes out it is normal to want to grab it and try it out. If you are a modder you have one of a few options either you can flash your device back to stock and then accept the ota update, you could find the stock update image and flash that in adb (you would then have to reinstall custom recovery and all that hoopla), or you could simply install a Rom update. Installing a Rom update is by far the easiest way you can update to the latest version of Android. You normally have to wait 24 hours, sometimes less, to get a Rom update since developers need the bit of time to convert it. The short wait is always worth avoiding the headaches in my opinion. Developer "Scrosler" of ScottsRoms has released his build of Stock 4.4.3 for the Nexus 7 (2013). If you are familiar with flashing roms then this should be an easy way to update your device.
