If there is a 2.3 update any time in the near future for droid users, will root be able to use it or is there really no point since we have custom roms etc?

That's not true. I was rooted when the 2.3.20 firmware came out, I still received the update. It just removed the root, and I was easily able to root afterwards.

You may not have to unroot, but if you are running custom roms you will have to revert to stock. Also it is unclear if the same root methods will still work.

You'll need to replace any bloatware you've uninstalled to do an OTA which will remove root...from what I've been told.
