I use BonkEnc portable for audio conversions. It is free and available at:

PortableApps.com - Portable software for USB drives

I prefer the portable (run from USB), that way I have access to it on most PCs and laptops.

There are many ways. Care to be more specific? Are you looking to convert on the device itself? On a PC? How much does quality matter to you? Is convenience more important? Do you need tag info pulled and added as well?
