What would happen if in the future I got an official update from Verizon and i'm rooted?

It will unroot you if you accept it.

You should be able to re-root again after, but not guaranteed...sometimes root exploits get closed in updates.

Best, if you want to keep root, is turn down the update. Usually a version of official updates you can install w/out affecting root are available for install shortly after the official release.
