FIXED IT! Found the issue..... was an app called Swype. I've disabled it (not sure where it came from or how it got enabled) and I now have the original keyboard display back. Much better now!
Motorola devices come installed with Swype. I'm not a fan of Swype either but it's probably the most popular 3rd party keyboard app. So it makes sense that they install it.
