They specifically say that you need to do a wipe of data/cache when going to any new version of Sapphire. Going from one that isnt even sapphire without wiping will more than likely have issues, as traces of the previous roms system files will be left. Sapphire is the smoothest rom i have tried to date, and i have had zero issues, but, i did do a wipe prior. If your looking for no bugs, you have to take preventative measures, no matter what rom you are using.

If you are unable to get rom manager/CWM recovery going, i would just backup to your previous rom and get ClockWork on there along with the GAPPS and try it again. I used SPRecovery for a long time, and thought i wouldnt switch to CW, but after trying it and using it for a while, i could never go back.

Ok to install the gapps without the use of a pc you have to make a few extra steps. This is sprecovery.

First make a backup of your current setup.
Flash saphire 1.0 as normal do not reboot
Make a backup of saphire
Then restore your previous backup(old ROM)
Reboot
Rename gapps to update.zip
Boot into recovery
Restore saphire backup
Install update
Reboot
Enjoy
