I havent flashed any roms since I had my og droid...

After upgrading to a galaxy nexus.. all I've done is unlock and root.

Wondering how I would UNinstall a rom if I wanted to get my nexus back to it original unlocked/rooted Non rommed state ??

Since you're not too new to rooting and ROMming, I won't go into too great of detail. Make a backup of your stock, rooted ROM. If you want to go back to stock after flashing a custom ROM, just go into recovery and flash the backup of your stock ROM. Easy peasy. Or, you could just flash an SBF file and it will take you back to out-of-the-box software. You'll just have to re-root. I'm not sure about having to re-unlock it.

Im confused about the lack of a sdcard in the nexus.

being there is no removable memory.. doesnt all my data get deleted when I do a factory reset/data wipe ?

If you do it with the stock system, yes (either in settings or in stock recovery). If you do it with a custom ROM, then you'll likely do it with a custom recovery like clockwork, which does not wipe the internal memory. Also, unlocking the bootloader wipes all memory, and running those files linked above to return to stock will wipe all memory.

Should I revert back to stock if I need to exchange my nexus for a new/refurb?

Unlocking and rooting voids your warranty, so there's a slight chance they could charge you for the phone when they get it back...

Honestly it's unlikely (though it has happened), but it's not worth the risk - especially on the Nexus which is so easy to revert to stock.
