Ok , I though you meant the actual RAM. Usually don't think about the graphics ram too much, it being built in the the card and all.

Yes the card ram, I could play bf3 and suck anybody's fps down to the ground because I suck at it. All you have to do is hunker down behind a bunch of barrels and sit. Fps will go to zero.

And to answer your first post you should be able to achieve your goals with an 680.
