If I were to sell my Motorola Droid, would I be correct in assuming that a " factory data reset ", listed under settings would be the best thing to do prior to sale? Thanks for any input.

A Factory Reset and a Wipe of the SD card should be sufficient

Well, you don't necessarily have to format the SD card. If you're getting another phone you can pull the SD card out of that one in put it in your Droid. Provided of course that it's a 16 gb SD card you're replacing it with.
