I composed an email, had an error in address, email was sent to outbox with
an icon that said mail was not sent.

How can I fix the email address error without having to compose the whole thing from scratch. I fixed it on the contacts list.

Tapping on the blue incorrect email address in the outbox folder doesn't do anything.

Any suggestions?

Always include the email app. Don't assume that others are using what you're using.

Don't know what you mean. I want to be able to correct an email address BEFORE it gets sent. Thanks
