i use launcher pro. it allows you to pick how many screens you want to use and lets you use custom icons for apps and also for the dock (which you can customize the shortcuts for as well).

if you want to use the stock launcher, bettercut and shortercut allow you to use custom icons for apps

I use ADW EX, I've used ADW, ADW EX, Launcher Pro, and Launcher Pro Plus. ADW EX is by far my favorite.

No. They are available to all users.
