Backing up application data before rooting/upgrade!

Is there any known method for doing a one-time full device backup of an unrooted 2.3.4 device?

This "only" requires getting root once briefly, i.e. the NAND lock isn't the problem. I have Titanium backup installed, but it can't do its magic without root. I've tried the various ADB-based schemes being talked about on forums, but they don't work since adb backup isn't supported in Android 2.3.4. The device was previously rooted (so the su binary is installed), but I just need to get it to work again briefly!

I don't mind buying apps or paying for a solution... cost isn't really a concern (within reason). I just need to get some data out from a couple of applications.
