another root question! S-off and S-on

I must have missed something huge recently because i suddenly come back to the forums and suddenly there's all this talk of RUU's and Unrevoked Forever blah blah blah. My question is, if I use Unrevoked forever to turn S-off, could I turn S-on back on (redundant?) just in case anything happens and i need to have a warranty replacement or any sort of repairs? I have the worst luck with phone's and i'm not really trying to take it in, have VZ tell me they won't replace it because I voided my warranty, and then be stuck with a broken phone, having to revert back to my voyager, or having to drop $500 some to get a replacement...

Also, if i can't turn S-on, can someone point me in the direction to update my baseband to 2.xx without it? I can't seem to find any links, all of em tell me to turn S-off...
