After Factory Reset (Upset), I can't manage Speed Dial. Re-unlock for SIM cards?

Ever since the arrival of Gingerbread, I've had endless issues, and just had my SECOND factory reset done.
1. I tried to assign a couple of Speed Dial numbers, but it will not let me assign the number 2. 3 was easy, but 2 is blank and has to button to assign it. This is not how it worked in Gingerbread before the reset (that way, of course, worked fine.)

2. My phone is unlocked, allowing me to use non-VZW SIM cards (I have some from when I worked launching GSM systems in Europe). After the reset, do I need to unlock the phone again, or was the first unlock all I need?

There's no way to restore SIM lock. Even if you reflash using RSDLite, the radio will stay unlocked for GSM.

As for Gmail, open the app.

Press Menu, tap More, Settings.

Tap your account name (something@...).

Tap Signature.

Type in the text.
