How do you get the update? Would you take it to a Verizon store and they
update it?

The update will come over the air (OTA) if you are stock, otherwise just wait a few extra hours for a dev to release a build of it.

But now with gingerbread coming at the end of the year, are we going to wait longer for those as well?

Gingerbread won't be out for other phones til after the nexus gets it being the google phone and all.
