I'm pretty sure you can raise the maximum amount of texts in your inbox (on the default text app) all the way up to 1000.

If you get Handcent, the storage is essentially unlimited. It'll just fill up all your phones memory, but you'd have to send an abnormal amount of texts to do that, which would probably take considerably longer than the standard 2 years that you'll have the phone.

@markml Even with handcent I still am only able to keep what ever the max inbox is in my stock text app(999 for me), as if everything is routed through that first. Is there a way to disable stock text app completely, not just turning notifications off?

No, they all "piggyback" off of the default messaging app.
