I know I just posted a couple hours ago but I changed it up just a little bit. Still using the same theme and Beautiful Widgets, however under the hood I changed to Nova Launcher. Running a lot smoother IMO. With Nova you can still use you Go themes.

As someone who's never used a Launcher program, if I switch to a Launcher and theme and then decide later I don't want it, will my now current pre-launcher desktop still remain, or will I have to set it all up from the ground up?

Once the you go back it should remain exactly how it was. I don't remember it ever changing anything. And I've installed a lot of launchers
